Sumiya, which means charcoal (sumi) house (ya), has introduced a sensational new menu by Master Chef, Tsuzuki Naoki of award-winning Kuriya Dining restaurant featuring freshly caught whole
Bluefin Tuna and an extensive range of seafood, served in a unique variety of cooking styles.
The restaurant’s new, signature item – fresh, whole Bluefin Tuna (Nama Hon Maguro), is raised in the pristine blue waters of Japan and flown into Singapore 2-3 times per week specially for the restaurant.
The addition of whole Bluefin Tuna reflects yet another ‘culinary coup’ for Master Chef Tsuzuki, as Bluefin Tuna is usually cut into portions, frozen and then imported into Singapore.
The new menu also introduces Can Can Mushi which combines freshly caught seafood with Japanese sake and dashi broth that are steamed in a style enjoyed by Japanese fishermen to bring out the natural essence of each ingredient. Sumiya’s fans can continue to enjoy the restaurant’s signature charcoal grilled seafood including a new isoyaki (char-grilled) range featuring live scallops, abalone, turban shell and oysters.
The homely restaurant is decorated with different Dairyo Bata (fishing fleet flags) which symbolizes the big catch by the fishermen. The counter also displays the catch of the day showcasing an array of fresh fish and seafood. Watch the chef at work as the food are cooked with blazing breaths of flames or dine under the stars in the outdoor seating area, which provides a fantastic view of the city.

・Clean food waste on the crockery (plate, bowl, spoon, etc) before putting inside the dishwashing machine
・Place all the crockery into dishwasher for cleaning and remove when cleaned
・Drain, arrange and deliver cleaned crockery to kitchen, kaiten, sevice area
・Throw rubbish; sweep and mop the floors
・Assist kitchen area for simple task (if needed during off peak hour)
・Clean washroom (if any)
・To perform any ad-hoc duties as required by the Chef / Manager
